Paneer Tikkas are one of the quintessential veg recipes of India and a Punjabi fare, without which no Punjabi meal is complete, especially in restaurants. 300 grams cottage cheese (paneer)
2 bunches fresh coriander, roughly chopped
1 bunch fresh mint, roughly chopped
4 green chillies, roughly chopped
10 garlic cloves, roughly chopped
1 cup yogurt
3 tablespoons gram flour
Salt to taste
1 teaspoon chaat masala
½ teaspoon garam masala powder
1 tablespoon lemon juice
1 tablespoon melted Pudina and Coriander Nutralite
- Coarsely grind the fresh coriander and mint, green chillies and garlic. Transfer to a bowl, add the yogurt, gram flour, salt, chaat masala, garam masala powder and lemon juice and mix well.
- Stir in Pudina and Coriander Nutralite. Add the cottage cheese and mix well so that all the pieces are well-coated with the mixture. Set aside to marinate for about half an hour.
- Heat a non-stick tawa. Thread the cottage cheese pieces one-inch apart onto skewers and grill turning from time to time, for about fifteen minutes, or till evenly cooked on all sides.
- Serve hot with onion rings and lemon wedges.
