Baked beans - one of the most popular comfort foods in the West, are quick and easy to make. When hunger strikes at an ungodly hour and every restaurant around has shut for the day, a Baked Bean Sandwich may be your only saving grace! Marathon board meeting in a few hours? No problem. A spoonful or two of Nutralite Mayo, some condiments, cheese and good ol’ baked beans is all you need. Rustle up a mayonnaise sandwich with baked beans and it’ll keep you going.   • 1 cup baked beans
  • 8 brown bread slices
  • 1 tablespoon oil
  • 5 garlic cloves, chopped
  • 1 large onion, chopped
  • 1 small green capsicum, chopped
  • Salt to taste
  • Black pepper powder to taste
  • 2 tablespoons tomato ketchup
  • 4 tablespoons Nutralite Mayo
  • Nutralite as required
  • 4 cheese slices

  1. Heat the oil in a non stick pan. Add the garlic and sauté for a minute. Add the onion and capsicum, mix well and sauté till onion becomes translucent.
  2. Add the baked beans, salt and pepper powder. Mix well and cook till the mixture thickens.
  3. Add the tomato ketchup, Nutralite Mayo and mix well. Set aside to cool.
  4. Apply Nutralite on one side of the bread slices and arrange 4 of them on the worktop. Spread the baked beans mixture on the bread and cover with the remaining bread slices.
  5. Brush a sandwich toaster with a little Nutralite. Place a sandwich on it and close. Cook till the sandwich turns golden brown on both the sides.
  6. Serve hot.
