How to Make Stuffed Kulcha Pockets with Flavoured Mayo
Step 1: Wake Up the Yeast
Stir sugar and yeast into warm water. Let it sit until bubbly, about 5 minutes.
Step 2: Pull the Dough Together
Dump flour and salt into a bowl. Add 2 tbsp Nutralite Mayo. You can choose any of the five distinct flavors, depending on the taste you want. Pour in the yeast mix. Knead into a smooth ball. Cover and rest for 45 minutes.
Step 3: Toss the Filling
In a bowl, mix veggies with chaat masala and green chilli. Spoon in 2 tbsp flavoured mayo. Stir in coriander.
Step 4: Build Your Pockets
Divide dough into 6 balls. Roll each into a 4-inch circle. Spoon filling on half. Fold over and seal tight. Gently press into a 5-inch pocket.
Step 5: Cook ’Em Up
Heat a pan on medium. Brush each pocket with a thin layer of mayo. Lay mayo-side down. Cook until brown spots pop, 2 minutes. Flip and finish. Drizzle a little oil if it sticks.
