Baking powder – 1 tsp
Salt – 1/4 tsp
Milk – 3/4 cup

Grated mozzarella – 1 cup (plus a little extra for topping)
Finely chopped capsicum – 1/2 cup
Sweet corn kernels – 1/3 cup
Finely chopped tomatoes – 1/3 cup
Mixed chopped bell peppers – 1/3 cup
Dried oregano – 1/2 tsp
Red chilli flakes – 1/4 tsp (optional)
Fresh basil leaves
In a bowl, whisk the flour, baking powder and a pinch of salt. Pour in the milk and oil, then stir in 3 tablespoons Nutralite Mayonnaise until the mix is just combined. The mayo keeps the batter tender and comes enriched with vitamins A, D2 and E.
Toss the grated mozzarella with capsicum, corn, tomatoes, bell peppers, oregano and a pinch of chilli flakes. Hold back a little cheese for the tops.
Preheat the oven to 180°C. Lightly grease a mini muffin tin. Spoon a small amount of batter into each cup and use the back of the spoon to flatten and spread it into a shallow base.
Place a tiny smear of tomato or pizza sauce on each base. Add the veggie-cheese mix, pressing lightly so the topping sits neatly on the base. Sprinkle the reserved cheese on top.
Bake for 12–14 minutes until the edges are golden and the cheese has melted. Let the cups rest in the tin for 1–2 minutes so they set, then lift them onto a rack.
