Olive Oil 3 tsp
Garlic Cloves, finely chopped 2
Fresh Ginger, grated 1-inch pieceย
Spring Onion (plus extra for garnish) 2 tbsp
Sweet Corn Kernels ยผ cup
Diced Carrots ยผ cup
Chopped Green Beans ยผ cup
Corn Paste (just blend sweet corn with a splash of water) ยฝ cup
Water (or light veg stock)
ยพ tsp salt (adjust to taste)
1 tsp corn flour + ยผ cup water (for slurry)
ยพ tsp freshly crushed black pepper
2 tsp white vinegar
Warm the olive oil in a pot. Add the garlic, ginger, and most of the spring onions. Let it sizzle just until fragrant.
Stir in the corn, carrots, and beans. After a couple of minutes, mix in the blended corn paste. Let it all cook together briefly.
Pour in water and add salt. Cover the pot and let it simmer on low heat for about 15 minutes, just enough for the veggies to soften up nicely.
While thatโs happening, mix the corn flour with water to make a slurry. Stir it into the soup and cook for another 2โ3 minutes until it thickens.
Turn off the heat and stir in Nutralite Doodhshakti Probiotic Butter Spread. It melts beautifully into the soup and adds that soft, buttery richness. Additionally, you get the bonus of gut-friendly probiotics.
Add pepper, vinegar, and a sprinkle of spring onions on top. Thatโs it, ladle it up and enjoy every sip.
