Garlic Cloves, finely chopped 2

Spring Onion (plus extra for garnish) 2 tbsp

Sweet Corn Kernels ยผ cup

Diced Carrots ยผ cup

Chopped Green Beans ยผ cup

Corn Paste (just blend sweet corn with a splash of water) ยฝ cup

Water (or light veg stock)

ยพ tsp salt (adjust to taste)

1 tsp corn flour + ยผ cup water (for slurry)

ยพ tsp freshly crushed black pepper

2 tsp white vinegar

How to Make Sweet Corn Soup with Butter Spread

Step 1: Start with flavour

Warm the olive oil in a pot. Add the garlic, ginger, and most of the spring onions. Let it sizzle just until fragrant.

Step 2: Add the crunch

Stir in the corn, carrots, and beans. After a couple of minutes, mix in the blended corn paste. Let it all cook together briefly.

Step 3: Simmer slowly

Pour in water and add salt. Cover the pot and let it simmer on low heat for about 15 minutes, just enough for the veggies to soften up nicely.

Step 4: Make it silky
