Ghee-Based Kuttu Puri with Aloo

2 cups Kuttu ka atta (buckwheat flour)

3 tbsp Nutralite Doodhshakti Pure Ghee, plus extra for frying

1 tsp Sendha Namak (rock salt)

1 Medium Potato, boiled and peeled

½ tsp Roasted Cumin powder

¼ tsp Black Pepper

1 Green Chilli, chopped (optional)

Handful of fresh Coriander leaves, chopped

Water, as needed

How to Make Ghee-Based Kuttu Puri with Aloo

Step 1: Mix the Dough

Stir flour and salt in a bowl. Rub in the Nutralite Doodhshakti Pure Ghee until pebbly. Splash in water, little by little, until it clumps into a soft ball. Cover and let it rest for 10 minutes.

Step 2: Prep the Potato

Smash the potato well. Sprinkle in cumin and pepper. Add the chopped chilli and coriander. Taste and tweak the salt. This filling pumps up a simple ghee recipe.

Step 3: Shape Your Puris

Tear off 8 dough bits. Roll them into balls. Flatten each into a small disc. Spoon in the aloo mix. Pull edges up and seal. Ease it back into a 4-inch circle.

Step 4: Fry in Pure Ghee

Warm a good slick of pure ghee in a deep pan. Test with a scrap of dough, it should dance and rise. Slide in one puri. Flip once it puffs and browns, about 30 sec per side. Drain on paper.

Step 5: Plate and Dive In
