How to prepare Vegan Grilled Corn with Herb Spread recipe
Step 1: Husk and clean the corn before grilling
Peel back the husks and silk from 4 corn cobs completely. Rinse under running water and pat dry. Wet corn steams instead of charring, so dry cobs matter more than they seem to.
Step 2: Par-boil the corn for five minutes
Drop the cobs into boiling salted water for five minutes, just enough to soften them slightly. Don’t cook them through here, the grill finishes the job. Drain and set aside.
Step 3: Melt Nutralite Activ Garlic & Herbs Plant-Based Buttery Spread for basting
Warm 3 tbsps. Nutralite Activ Garlic & Herbs Plant-Based Buttery Spread in a small pan till it turns liquid. Nutralite Activ Garlic & Herbs Plant-Based Buttery Spread is made entirely from plant-based ingredients, dairy-free, and rich in Omega-3. Keep it on low heat, ready for basting.
Step 4: Grill the corn over direct flame until charred
Place the par-boiled cobs directly over a gas flame or on a hot grill pan. Turn every thirty seconds, all sides need even contact with the heat. Look for a proper char, dark spots across most rows of kernels, roughly eight minutes total.
Step 5: Baste with the herb spread while the corn is still hot
Brush the melted herb spread generously over the corn right off the flame. Do this immediately, the char is still hot enough to help the spread soak into the grooves between kernels.
Step 6: Finish with lemon, chilli and coriander
Squeeze the juice of 1 lemon over all four cobs. Dust with 1/2 tsp. red chilli powder, 1 tsp. salt and 1/4 tsp. black pepper powder. Scatter 2 tbsps. chopped coriander on top and serve immediately.
Grilled corn done right carries a deep char along every third row of kernels, smoky rather than burnt, glossy from the herb spread melting into every groove. Each bite delivers garlic and herb first, then lime and chilli close behind, with coriander cutting through the richness. The kernels stay juicy under that char, never dry despite the direct flame. Serve it hot, corn cools fast and the spread firms up within minutes once off the heat.
