How to prepare Juicy Mushroom Bites with a Creamy Garlic Filling recipe
Step 1: Clean and hollow the mushroom caps
Wipe 250 g button mushrooms with a damp cloth. Water makes them soggy, so keep them away from the tap. Snap out the stems. Scoop a bit of flesh from each cap with a small spoon so there is room for the filling. Chop those scooped stems fine and set them aside.
Step 2: Cook down the garlic base
Melt 2 tbsps Nutralite Doodhshakti Probiotic Butter Spread in a pan on low heat. It tastes exactly like butter. Add the chopped garlic and green chilli. Once they turn fragrant, tip in the chopped stems and stir for a couple of minutes.
Step 3: Build the creamy filling
Scrape the pan contents into a mixing bowl and let it cool a little. Add 4 tbsps Nutralite Cheesy Garlic Mayo. It is eggless and made with real cheese and garlic. Spoon in 2 tbsps Nutralite Veg Mayo, enriched with Vitamins A, D2 and E. Toss in the grated cheese, coriander and black pepper. Go easy on the salt here, the cheese already brings plenty. Mix.
Step 4: Fill the caps
Spoon the filling into each mushroom cap. Push it down, then heap a little extra on top. Sprinkle breadcrumbs over the lot for some bite.
Step 5: Bake
Line a tray and set the caps on it. Bake at 200°C for 15 to 18 minutes. They are done when the caps go soft and the tops catch a bit of colour.
Step 6: Finish and serve
Take the tray out once the filling bubbles at the edges. Scatter coriander on top. Eat them warm, while the middles are still gooey.
Straight from the oven, the caps look glossy with a golden, crumb-flecked top. Bite in and the mushroom gives a little before you hit the filling, which stays soft and properly cheesy. Garlic runs through all of it without taking over. The breadcrumbs add just enough texture so it is not all soft. They cool down fast, so serve them warm and quick. At most gatherings, the plate clears well before the second round of tea reaches the table.
