How To Make Dhaba Style Chicken Curry
Step 1: Heat up the Spices and Add Onions
To begin with, heat the whole spices (cinnamon, cloves, black cardamom and green cardamom) in some oil. Once they’re heated up, add the sliced onions to the spices and cook until they look golden brown.
Step 2: Prepare the Sauté
Once the onions look golden brown, add some ginger-garlic paste, slit green chillies, all the spice powders and salt. Sauté these ingredients for 20 seconds, and then add the pureed tomatoes. Cook the ingredients for five minutes, adding water when necessary.
Step 3: Time to Introduce the Chicken
There’s no chicken curry without chicken. So now it’s time to add chicken to the curry. Add the chicken pieces to the curry mix and sauté it for 2 minutes.
Step 4: Cook the Chicken Curry
Add some water to the chicken curry, enough so that all the ingredients are covered in it. Cook it for 20 minutes on a low flame.
Step 5: Taste the Curry
You’ll need to cook the chicken curry until the oil is floating at the top, or around the edges. When you see this happen, you’ll know the masalas have been cooked. Taste and adjust for the salt according to your preference.
Step 6: Final Touches for Added Flavor
Add chopped coriander leaves and crushed kasuri methi to the chicken curry, and remove it from the heat. In a separate pan, heat up some ghee and chopped ginger. Add some chilli powder to this pan and then turn off the flame. Then add this to the chicken curry.
