1 bunch spinach, washed and chopped
1 cup corn kernels, cooked or canned
1/4 cup chopped red onion
4 tbsp mayonnaise
4 slices whole-wheat bread
Salt and pepper to taste
Boil spinach leaves and corn kernels. Sautรฉ chopped onions in a pan, add the boiled spinach, and mix well. Blend the mixture for a consistent texture. Combine with crushed corn and Nutralite Veg Mayo. Nutralite Veg Mayo is enriched with vitamins A, D2 & E.

3 tsp Oil
1 Onion, finely chopped
1 tsp Ginger Garlic Paste
1 tsp Chilli, finely chopped
3 tbsp Peas / Matar
3 tbsp Sweet Corn
3 Potato /Aloo, boiled & mashed
ยผ tsp Turmeric
ยฝ tsp Kashmiri Red Chilli Powder
ยฝ tsp Garam Masala
ยฝ tsp Aamchur / dry mango powder
ยฝ tsp Salt
2 tbsps Coriander, finely chopped
Chaat Masala 1 tsp6 slice Bread, white or brown
Oil for deep frying
In a large kadhai, heat 3 tbsps of oil. Add a finely chopped onion and sautรฉ it until it changes colour. Then add a tsp of ginger garlic paste, and 1 tsp chilli to the sautรฉ. Then add 3 tbsps of peas and 3 tbsps of sweet corn to the sautรฉ. Cook the ingredients until they look well-cooked but still hold their shape.
The next step is to add boiled mashed potatoes to the mix. It would be ideal to pressure cook the mashed potatoes for around 3-4 whistles. Once youโve added the potatoes, itโs time to add the masala. Add ยผ tsp turmeric, ยฝ tsp chilli powder, ยฝ tsp garam masala, ยฝ tsp aamchur and ยฝ tsp salt. Stir the ingredients together until they are well combined.

Once the stuffing is cooked and ready, separate it into three parts and roll each part into a cylindrical shape. Wrap a bread slice around each roll of stuffing and pinch the edges to ensure it stays secure and tight.
In a fresh kadhai, boil some oil until it is hot enough to deep fry the ingredients. Then deep fry the bread rolls until they look crisp. Keep stirring and frying it occasionally until it turns golden brown.
Serve the bread rolls on a plate along with ketchup for a tasty evening snack!
