Soft, fragrant and comforting, this sweet potato halwa turns simple boiled Ratalu (sweet potatoes) into a smooth, creamy dessert the whole family loves. 2 cups all-purpose flour

1 tsp sugar

1 tsp active dry yeast

½ tsp salt

2 tbsp Nutralite mayo (veg mayo)

½ cup warm water

1 cup mixed veggies (peas, carrot, capsicum), finely chopped

1 green chilli, chopped (optional)

1 tsp chaat masala

1 tbsp fresh coriander, chopped

2 tbsp Nutralite flavoured mayo (choose your favourite)

How to Make Stuffed Kulcha Pockets with Flavoured Mayo

Step 1: Wake Up the Yeast

Stir sugar and yeast into warm water. Let it sit until bubbly, about 5 minutes.

Step 2: Pull the Dough Together

Dump flour and salt into a bowl. Add 2 tbsp Nutralite Mayo. You can choose any of the five distinct flavors, depending on the taste you want. Pour in the yeast mix. Knead into a smooth ball. Cover and rest for 45 minutes.

Step 3: Toss the Filling

In a bowl, mix veggies with chaat masala and green chilli. Spoon in 2 tbsp flavoured mayo. Stir in coriander.

Step 4: Build Your Pockets

Divide dough into 6 balls. Roll each into a 4-inch circle. Spoon filling on half. Fold over and seal tight. Gently press into a 5-inch pocket.

Step 5: Cook ’Em Up

Heat a pan on medium. Brush each pocket with a thin layer of mayo. Lay mayo-side down. Cook until brown spots pop, 2 minutes. Flip and finish. Drizzle a little oil if it sticks.

Boiled sweet potato, mashed – 500 g

Sugar – 100 g

Nutralite DoodhShakti Pure Ghee – 4 tbsps

Whole milk – 150 ml

Cardamom powder – 1 tsp

Chopped almonds – 2 tbsps

Chopped pistachios – 2 tbsps

Saffron strands (optional)

A pinch of salt – 1/4 cups

How to Prepare Sweet Potato Halwa Recipe

Step 1: Roast the sweet potato in pure ghee

Place a heavy-bottomed pan on medium heat and add 2 tbsps Nutralite Doodhshakti Pure Ghee. Once it melts and turns aromatic, add the mashed boiled sweet potato. Stir continuously for 4 to 5 minutes so the mixture roasts evenly. This step builds flavour and removes any raw aftertaste. The sweet potato should look slightly glossy and smell nutty.

Step 2: Add milk and cook until smooth

Pour in 150 ml whole milk and mix well so no lumps remain. Lower the heat and cook, stirring often, for 5 to 6 minutes. The mixture will slowly thicken as the milk reduces. Keep scraping the sides of the pan and folding the halwa back into the centre for an even texture.

Step 4: Finish with ghee and garnish

Switch off the heat and immediately stir in the remaining 2 tbsps Nutralite DoodhShakti Pure Ghee. This final addition enhances shine, aroma, and richness. Fold in chopped almonds and pistachios, then garnish with saffron strands if desired. Serve warm for the best flavour and texture.
