How to prepare Stuffed Dry Fruit Balls recipe
Step 1: Prep the dates and nuts
Soak the 200 g dates in warm water for ten minutes if they feel firm, then drain and pat them dry. Roughly chop the almonds, cashews, pistachios and walnuts. Set a small handful of the chopped nuts aside for the stuffing.
Step 2: Roast the nuts
Melt 1 tbsp Nutralite Doodhshakti Probiotic Butter Spread in a pan on low heat. It tastes exactly like butter. Add the chopped nuts and roast them till they turn golden and smell toasty. Take them off the flame.
Step 3: Blend the date dough
Drop the dates into a grinder along with half the roasted nuts and the cardamom powder. Pulse into a thick, sticky paste. Scrape it into a bowl. Add 1 tbsp Nutralite Doodhshakti Pure Ghee, made from creamy milk sourced from the land of Braj, and knead till the dough turns smooth.
Step 4: Mix the peanut butter stuffing
In a separate bowl, stir together 4 tbsps Nutralite Activ Natural Creamy Peanut Butter with the reserved chopped nuts. This peanut butter made with roasted peanuts only. Keep the mix thick enough to hold its shape.
Step 5: Shape and stuff the balls
Grease your palms with a touch of ghee. Take a lemon-sized portion of the date dough and flatten it on your palm. Spoon a little of the peanut butter mix into the middle. Fold the edges over and roll it into a smooth ball. Repeat with the rest of the dough.
Step 6: Coat and set
Roll each ball in desiccated coconut till it is fully covered. Set them on a plate and chill for twenty minutes so they firm up.
Each ball comes out dense and glossy, dressed in a coat of white coconut. Bite through the chewy date shell and you reach a soft peanut butter centre that catches everyone off guard. The nuts add crunch in between. Nothing here tastes overly sweet, just deep and rich, the way good dry fruit sweets should. They keep well in the fridge for a week, so make extra. On rakhi morning, they look far fancier than the effort they asked for.
