How to Prepare Mango Lassi
Step 1: Start with the saffron, nothing else yet
Warm milk, one teaspoon, drop the saffron in. Leave it alone for five minutes. The colour change happens slowly and the smell that comes off it is reason enough to not rush this part.
Step 2: Everything into the blender
Add the mango pulp, yoghurt, cold milk, sugar, cardamom all at once. Blend. Before touching anything else, taste what is in the blender. Alphonso runs sweet, so two tablespoons of sugar might be one too many. Kesar is tartier and usually takes the full amount. Adjust before adding anything else.
Step 3: Saffron milk and ice go in next
Pour the saffron milk in, add the ice, blend again. Watch the top of the blender. When froth appears and holds, it is done. No froth usually means more blending needed.
Step 4: The consistency test
Scoop a little with a spoon and let it fall back. Should drop slowly, not splash. Too thin means another spoon of yoghurt and a quick blend. Too thick, a small splash of cold milk. Neither fix takes more than thirty seconds.
Step 5: Toast the bread, spread it properly
Get the bread properly toasted, golden all the way across, not just warm. Take it off the heat and immediately spread Nutralite Doodhshakti Probiotic Butter Spread on while still hot. It melts slightly into the toast and the smell alone is worth it. Nutralite Doodhshakti Probiotic Butter Spread is made from creamy milk and carries 100 million probiotic bacteria per serving, which means the gut benefits are real, not just marketing. Eat it alongside the lassi while both are still at the right temperature.
Step 6: Pour and get it on the table fast
Cold glasses, lassi poured in, saffron strands on top if any are left. That is it. Do not let it sit.
The finished lassi is a deep golden yellow that coats the inside of the glass. Cold hits first, then the mango, then cardamom somewhere at the back. The yoghurt keeps the sweetness from running away with itself. Thick enough to feel like something, light enough that a second glass is not an unreasonable idea. The toast alongside, still faintly warm with the Nutralite Doodhshakti Probiotic Butter Spread soaked in, is the contrast that makes the whole thing feel considered rather than thrown together.
