Kuttu ka atta (buckwheat flour) – 2 cups
Salt (sendha namak) – 1/2 tsp
Water – as needed for kneading

Sabudana (tapioca pearls) – 1 cup (soaked)
Roasted peanuts (coarsely crushed) – 1/2 cup
Green chilli – 1 nos (optional, slit)
Cumin seeds (jeera) – 1/2 tsp
Salt (sendha namak) – 1 tsp
Lemon juice – 1 tbsp
Nutralite Doodhshakti Pure Ghee – 2 tbsp
Potatoes (medium, boiled and cubed) – 3 nos
Tomatoes (ripe, chopped) – 2 nos
Rock salt (sendha namak) – 1 tsp
Cumin powder – 1/2 tsp
Black pepper powder – 1/4 tsp
Nutralite Doodhshakti Pure Ghee – 2 tbsp
Makhana (fox nuts) – 2 cups (lightly roasted)
Fresh curd (yogurt) – 1/2 cup (whisked)
Cumin seeds – 1/2 tsp
Turmeric powder – 1/4 tsp
Rock salt (sendha namak) – 1 tsp
Nutralite Doodhshakti Pure Ghee – 2 tbsp
Fresh curd (whisked) – 1 cup
Roasted cumin powder – 1/2 tsp
Salt (sendha namak) – 1/2 tsp
Coriander leaves (chopped) – 1 tbsp
Singhare ka atta (water chestnut flour) – 1 cup
Jaggery (grated) – 3/4 cup
Water – 2 cups
Nutralite Doodhshakti Pure Ghee – 3 tbsp
Cardamom powder – 1/4 tsp
Rajgira (amaranth puffed) – 1 cup
Jaggery (grated) – 3/4 cup
Nutralite Doodhshakti Pure Ghee – 2 tbsp
Crushed nuts (optional) – 1/4 cup
Combine 2 cups kuttu ka atta with 1/2 tsp salt and add water slowly to form a pliable dough. Divide into 6 to 8 portions. Roll each portion between parchment or plastic to avoid sticking, keeping the roti slightly thicker than wheat rotis. Cook on a hot tawa with 1 tsp Nutralite Doodhshakti Pure Ghee until both sides show light brown spots.
Drain soaked sabudana. Heat 1 tbsp Nutralite Doodhshakti Pure Ghee in a pan, add 1/2 tsp cumin seeds, then sauté crushed peanuts and green chilli. Add sabudana, salt, and lemon juice. Toss gently on medium heat until translucent and separated. Finish with 1 tbsp Nutralite Doodhshakti Pure Ghee for shine.
Heat 1 tbsp Nutralite Doodhakti Pure Ghee in a pan, add chopped tomatoes and simmer until soft. Add boiled potato cubes, rock salt, cumin powder and pepper. Cook together for 5 to 7 minutes so potatoes absorb the tomato flavor. Stir in 1 tbsp Nutralite Doodhshakti Pure Ghee before serving.
Lightly roast makhana in 1 tbsp Nutralite Doodhshakti Pure Ghee until crisp. Remove and set aside. In the same pan, add a little more ghee, temper cumin, stir in whisked curd and turmeric, cook on low heat until slightly thickened. Add roasted makhana and simmer for 3 minutes. Adjust salt and finish with a final drizzle of Nutralite Doodhshakti Pure Ghee.
Combine 1 cup whisked curd with roasted cumin powder, rock salt and chopped coriander. Keep chilled until serving to bring a cooling contrast to ghee-rich dishes.
