Gajak Recipe with a Crunchy Twist Using Jaggery and Sesame

Winter is here, and with it, the desi festive season is up and running! We’re all excited about the delicious festive sweets, and wholesome meals we’ll get to enjoy in the company of our loved ones, and it’s an exciting time to be here! But there’s nothing quite like the feeling of crunching on some delicious gajak chikki. Harvest festivals like Makar Sankranti and Lohri are just around the corner, the perfect opportunity to make some of your own crunchy Gajak at home, and you can do this easily with a simple recipe for Gajak using Nutralite Doodhshakti Pure Ghee!

Ingredients in Til Gud Gajak

Sesame seeds (til) – ½ cup

Jaggery powder (gud) – ½ cup

Nutralite Doodhshakti Pure Ghee (plus extra for greasing) – ½ tsp 

Cooking soda – ½ tsp

Water – 1 tbsp

How to Make Til Gud Gajak

Step 1: Grease the platform and prep butter paper

Grease a flat platform or a rolling pin with Nutralite Doodhshakti Pure Ghee and keep a sheet of butter paper ready to avoid a mess.

Step 2: Roast the sesame seeds

Heat a pan on medium flame and roast the sesame seeds until they turn golden and begin popping, then transfer them to a plate to cool.

Step 3: Dissolve the jaggery

In the same pan add jaggery powder and one tablespoon of water. Heat on low flame and stir casually until the jaggery fully dissolves.

Step 4: Boil and froth the syrup

When the syrup begins to boil and become frothy, add Nutralite Doodhshakti Pure Ghee. Keep a bowl of cold water nearby to test syrup consistency.

Step 5: Test syrup for correct stage

Drop a little syrup into cold water. It should be soft at first, then form a string that bends. Continue testing until the drop hardens and breaks crisp, taking care not to overcook.

Step 6: Add baking soda

Add a pinch of baking soda and mix briskly. The syrup will become pale and foamy as the baking soda reacts.

Step 7: Combine seeds with syrup

On a low flame fold in the roasted sesame seeds and mix rapidly until the seeds are evenly coated and the syrup comes together into a mass. Switch off the stove.

Step 8: Transfer and press the mixture

Immediately transfer the hot mixture to the greased platform. Cover with butter paper and press with a rolling pin to spread it out, then roll to thin it.

Step 9: Cut to shape quickly

Use a stencil or a knife to cut the desired shapes. There is no need to separate pieces now. Work quickly because the mixture cools and hardens fast.

Step 10: Cool, break, and store

Once cold and hard, break the gajak along the cut lines. Store at room temperature in an airtight container and consume within about one week.
