  • ¼ Cup Nutralite
  • 1½ Cup Chopped Onion
  • 1 Tablespoon Finely Chopped Ginger
  • 1½ Teaspoon Minced Garlic
  • 3 Cups Chopped Carrots
  • 2 Chopped Tomatoes
  • 1½ Teaspoon Grated Lemon Peel
  • 3 Cups Vegetable Stock
  • 2 Tablespoon Lemon Juice
  • 1 Small Grated Carrot


  1. Melt Nutralite in a pot over medium-high heat.
  2. Add onion; saute for 4 minutes. Then add ginger and garlic; saute 2 minutes.
  3. Add chopped carrots, tomatoes and lemon peel; saute for 1 minute.
  4. Add 3 cups vegetable stock and bring to a boil.
  5. Reduce the flame, cover partially and simmer until carrots turn tender, for about 20 minutes. Cool slightly.
  6. Puree soup in batches in a blender. Return soup to the pot. Mix in lemon juice. Season with salt and pepper.
  7. Bring soup to a simmer, thinning with more stock, if desired. Ladle into bowls. Top each with Nutralite and grated carrot.
