Family gatherings in summer have a dessert problem. Everyone wants something cold and mango-flavoured. Nobody wants to spend two hours in a kitchen already competing with the weather outside.

The five desserts ahead are built for exactly that situation. Some take ten minutes. The most involved one takes about thirty, most of which is waiting rather than working. None of them require an oven, a standing mixer, or any equipment most kitchens do not already have.

Mango Mousse Is Where to Start Because It Is the Fastest

Whip fresh cream to soft peaks. Fold in ripe mango pulp, a little sugar, a pinch of cardamom. Pour into small glasses and put them in the fridge.

That is the whole recipe. The two hour wait is the only part that requires any patience.

Alphonso works best here. Kesar is fine. Both are sweet enough that the added sugar might only need a tablespoon per batch, not two. Taste the pulp before deciding. The mousse holds in the fridge for two days, which makes the night before the obvious time to do this rather than the morning of the gathering itself.

No-Churn Mango Ice Cream That Does Not Need a Machine or a Custard Base

No machine. No custard. Three ingredients and six hours of freezer time, most of which nobody is awake for.

Whip 200ml of heavy cream to stiff peaks. Fold in a cup of ripe mango pulp and three tablespoons of condensed milk. Into a container, cling film pressed directly onto the surface, into the freezer overnight. The condensed milk keeps the mixture from going icy and solid the way plain frozen cream does. Take it out ten minutes before scooping.

Double the batch for a gathering. It takes the same amount of effort and the extra disappears fast enough that there is rarely any left to store.

No-Bake Mango Cheesecake With a Base That Does More Than Hold the Filling

This one has a few more components but nothing that involves heat or any real technical skill.

Crush 150 grams of digestive biscuits to fine crumbs. Mix with two tablespoons of Nutralite Doodhshakti Probiotic Butter Spread, melted slightly, and press into the base of a springform tin or individual cups. Refrigerate thirty minutes. Nutralite Doodhshakti Probiotic Butter Spread is made from creamy milk and carries 10 million probiotic bacteria per serving, so the biscuit base is doing something beyond just being structural.

For the filling: cream cheese beaten with icing sugar until smooth, thick mango pulp folded in, a little whipped cream to lighten it. Pour over the chilled base, refrigerate four hours minimum. Top with fresh mango slices right before anyone sees it, not hours before.

A few mint leaves if they are in the house. Optional, but they make the whole thing look significantly more put together.

Mango Pudding That Sets Firm and Travels Well If the Gathering Is Elsewhere

Closer in texture to a panna cotta than what most people picture when they hear pudding. Cold, set, slightly jiggly in a way children find unreasonably entertaining.

Heat one cup of mango pulp with half a cup of sugar and a cup of coconut milk until the sugar is fully dissolved. Not boiling, just hot enough. Off the heat. Dissolve one and a half teaspoons of agar agar powder in a little warm water separately and stir it through. Pour into small moulds or cups, refrigerate two to three hours.

Deep golden orange when unmoulded, smooth on top, holds its shape cleanly on a plate. The coconut milk sits quietly behind the mango without announcing itself. This is also the only dessert on this list that survives a car journey without turning into something else.

Mango Sheera Made With Ghee, Because Some Things Should Stay Warm

Every other dessert here is cold. This one is warm. It is also, at most family tables, the first one to finish.

Heat two tablespoons of Nutralite Doodhshakti Pure Ghee in a heavy pan. Add semolina and roast on medium heat, stirring, until the colour turns golden. Nutralite Doodhshakti Pure Ghee is made from fresh and creamy milk, has a characteristic granular texture and rich aroma, and is enriched with Vitamin A. What it does to roasting semolina specifically is something no other fat replicates, the smell is most of the reason sheera tastes the way sheera tastes. Warm milk and sugar go in next, stir continuously until thickened, off the heat, then fresh mango pulp and cardamom folded through once the pan has cooled slightly.

The mango sits underneath the ghee and semolina here rather than leading the flavour. Not everyone expects that the first time they eat it. Nobody minds once they do.

The Right Mango Matters More for Some of These Than Others

Alphonso or Kesar for all five. Canned Alphonso pulp is a reasonable substitute for the mousse, ice cream, pudding, and cheesecake filling when fresh is not available or not worth the price that week.

Not for the sheera. Fresh mango texture matters there in a way it does not in the blended or folded applications. The fibrous varieties are fine for the sheera but will show up in the mousse and cheesecake in a way that is distracting. Worth thinking about before buying whatever is cheapest at the market.

How Much to Make for Ten to Twelve People

One batch of mousse fills roughly twelve small glasses. The ice cream doubles easily with no extra work. The cheesecake in a standard springform tin serves eight to ten. The pudding in individual cups yields about eight portions per batch, so one and a half batches for twelve is the safer calculation. The sheera depends on the semolina quantity, but 200 grams feeds ten without anyone feeling shortchanged.

Mousse and pudding are the easiest to scale. Both sit happily in the fridge for two days without any degradation worth mentioning.
