Ingredients
(for cookie)
1 cup softened butter
1 cup sugar
1 large egg
22 tablespoons orange juice
1 tablespoon vanilla
2 and ½ cups all-purpose flour
1 teaspoon baking powder
(for frosting)
3 cups powdered sugar
1/3 cup softened butter
1 teaspoon vanilla
1 to 2 tablespoons milk
Food colour, if desired
Directions –
Combine 1 cup butter, sugar and egg in bowl. This should be beaten at medium speed, scraping bowl often, until creamy. Thereafter, add orange juice and 1 tablespoon vanilla. Continue beating, scraping bowl often in the same way, until well mixed. Following this, add flour and baking powder, beat at low speed until well mixed.
The dough is to be divided into thirds. Shape each third into a ball, flatten slightly. Wrap each in plastic food wrap, refrigerate 2-3 hours until firm.
Heat oven to 400 degrees Fahrenheit.
Next, roll out dough, one-third at a time, on a lightly floured surface (keeping remaining dough refrigerated), to 1/8 to ¼ inch thickness. This is to be cut with 3 inch cookie cutters. Place 1 inch apart onto ungreased cookie sheets.
Following this, bake for 6-10 minutes or until edges are lightly browned. Let stand 1 minute on cookie sheet, remove to cooling rack. Cool completely.
Then, powdered sugar, 1/3 cup butter and 1 teaspoon vanilla are to be combined in bowl.

½ cup all-purpose flour
1 teaspoon baking powder
1/3 cup vegetable oil
2/3cup packed dark brown sugar
1 large egg
1 teaspoon pure vanilla extract
½ cup rolled oats
½ cup dried currants or raisins
Directions –
The oven should be preheated to 350 degrees. In a medium bowl, the flours and baking powder should be whisked and set aside.
In a large bowl, whisk together oil, sugar, egg, and vanilla. Thereafter, add flour mixture, and stir to combine. Following this, mix in oats and currants.
Using two tablespoons of dough per cookie, roll into balls. Then, place them on two baking sheets lined with parchment paper, 1 and ½ inches apart. Bake until lightly browned, 15 to 17 minutes, rotating sheets halfway through.
Cool 5 minutes on sheets, then transfer cookies to a wire rack to let them cool down completely.
