Ingredients

What You Need To Prepare Spicy Chilli Bean Soup


  • Nutralite Classic - 1 tbsp
  • Onion - 1
  • Garlic - 1 Clove
  • Tomato puree - 1 tbsp
  • Chilli Powder - 1 tbsp
  • Cumin - ½ teaspoon
  • Canned Tomatoes - 400g
  • Butter beans - 400g
  • Canned Kidney beans - 400g
  • Vegetable Stock - 400ml
  • Red Pepper - 1
  • Coriander - 2 tbsp

Instructions

How To Make Spicy Chilli Bean Soup


  1. Heat the Nutralite, add the chopped onions. Cook until soft.
  2. Stir in garlic, tomato puree and the spices, then cook for a minute.
  3. Add chopped tomatoes and stock, bring it to a boil. Simmer for 10 minutes.
  4. Once cool, puree it in a blender and return it to the pan.
  5. Add the beans and red pepper.
  6. Bring to boil and cook for 10 minutes.
  7. Season to taste and add extra stock or water, for thinner consistency.
  8. Garnish with coriander.
