The rainy season is upon us! The perfect time for some piping hot toasties and chai. We suggest some Grilled Corn and Capsicum Toasties. One of the easiest recipes with mayonnaise, it is the perfect snack after a lazy afternoon siesta, as you catch up on yet another re-run of your favorite television series or that bestseller novel sitting on your bookshelf. Here is what you’ll need:

  • 8 multigrain bread slices
  • 1 cup sweet corn kernels, boiled
  • 1 medium green capsicum, chopped
  • ½ cup skimmed milk cottage cheese (paneer)
  • 2-3 green chillies, chopped
  • 2 tablespoons chopped fresh coriander leaves
  • 1 medium onion, chopped
  • 7-8 black peppercorns, crushed
  • Salt to taste
  • 2 tablespoons Nutralite Mayonnaise

Method


  1. Preheat the oven to 180°C
  2. Mix together sweet corn, capsicum, cottage cheese, green chillies, coriander leaves, onion, crushed peppercorns, salt and Nutralite Mayonnaise in a bowl. Divide the mixture into 8 equal portions.
  3. Toast the slices of bread on one side on a non-stick tawa.
  4. Spread the corn mixture on the other side.
  5. Place on a baking tray, put the tray in the preheated oven and bake till the topping turns golden brown.
  6. Halve diagonally and serve hot with tomato ketchup.
