Healthy Breakfast With Brown Bread Pudding Plum Compote

BROWN BREAD AND BUTTER PUDDING WITH PLUM COMPOTE

Ingredients

6 brown bread slices

3 tablespoons Nutralite

2 cups milk

½ cup sugar

2 eggs

1 teaspoon vanilla essence

½ cup raisins

5 plums, seeded and chopped

½ cup sugar

1 tablespoon Nutralite


Method
  • Preheat an oven to 180° C/350° F/Gas Mark 4.
  • Trim off the crusts of the bread slices and apply Nutralite only on one side. Cut the slices into triangles. Arrange the triangles in a baking dish with the buttered side up.
  • Heat the milk in a non-stick pan, add the sugar and stir till the sugar dissolves.
  • Break the eggs in a bowl but do not beat them. Add the eggs to the milk and mix. Add the vanilla essence.
  • Sprinkle the raisins over the bread pieces and pour the egg-milk mixture over them through a strainer. Bake in the preheated oven for twenty-five to thirty minutes.
  • To make the plum compote, mix the sugar and plums in a non-stick pan and cook till the plums become soft and pulpy.
  • Take the pan off the heat and add the Nutralite and mix well.
  • Serve the pudding hot or cold topped with the plum compote.
