Viva Mexico! The land of the mariachi and the distinctive poncho has also given the world a gastronomic wonder, that we couldn’t imagine life without - “Tacos”. Coleslaw tacos are one of the many Mexican foods that make for a great mid-day snack. Not only are they filling, but also pack a healthy punch with their assorted veggies and of course, mayonnaise! For those calorie-conscious readers who may be thinking, ‘‘Mayo!? Healthy? Don’t you know what is mayonnaise made of?” The simple answer is, not all mayo brands are made the same way. One cannot imagine tacos without a creamy layer of mayonnaise which really brings out the flavours of the coleslaw.   • 12 tacos shells
  • ¼ medium cabbage, shredded
  • 1 medium carrot, grated
  • 1 small green capsicums, cut into thin strips
  • 1 small yellow capsicum, cut into thin strips
  • 1 small red capsicum, cut into thin strips
  • 50 grams cottage cheese (paneer), cut into small cubes
  • Salt to taste
  • Black pepper powder to taste
  • ¼ cup Nutralite Mayonnaise
  • ¼ cup cream cheese
  • 2 tablespoons tomato ketchup
  • 4 spring onions, cut into thin strips

Instructions

Method


  1. Mix together the cabbage, carrot, green capsicum, yellow capsicum, red capsicum, cottage cheese, salt and pepper powder in a bowl.
  2. Mix the Nutralite Mayonnaise, cream cheese and tomato ketchup in another bowl.
  3. Place a tablespoon full of the vegetable mixture into each taco shell, drizzle a little of the mayonnaise mixture, garnish with the spring onions and serve immediately.

While you’re at it, pour yourself some red sangrita, put on some relaxing music and raise a toast to yourself, as the long week draws to a close.
