Nankhatai are an eggless buttery Indian cookies savoured with tea. Buttery and crunchy in taste, they’re best prepared with Nutralite. If you want to try your hand at cooking Nankhatai, follow this easy Nankhatai recipe and start baking away!

Ingredients

  • 2½ Cups Besan
  • 1 Teaspoon Baking Powder
  • ¼ Teaspoon Green Cardamom Powder
  • 1 Cup Nutralite
  • 1¾ Cups Powdered Sugar
  • ¼ Cup Yogurt

Instructions

  1. Preheat the oven at 180℃.
  2. Take a bowl and sift besan flour, cardamom powder and baking powder.
  3. In a separate bowl, mix some Nutralite and sugar.
  4. In that bowl, add the flour & powder blend, and mix slowly until it is blended.
  5. Once done, add the yogurt to the mixture, and stir well. Keep it inside the refrigerator for about 20 minutes.
  6. Take out the mixture from the refrigerator and divide it into equal chunks. Flatten the mixture a bit and shape it into small balls. Place it in a baking tray.
  7. Bake the mixture in the pre-heated oven for about 15 minutes.
  8. Remove the cookies from the oven. Serve them once cooled, or store inside an airtight container to be served at a later time.
